Turn a packet of bread over and read the small print near the bottom. Not the calories — the part with the long words and the numbers that start with E.
Most of us stopped reading that years ago. It never seemed to say anything we could use.
Researchers in France read it for 112,395 people, for almost eight years.
What came out of that is one of the largest looks yet at food preservatives linked to high blood pressure. Not the salt. Not the sugar. Not the fat. The preservatives — the ingredients whose entire job is to stop food going bad.
The eight food preservatives linked to high blood pressure
Eight came out with a link to new cases of high blood pressure. Here they are, with the code you would actually see printed on a wrapper:
- Potassium sorbate (E202)
- Potassium metabisulphite (E224)
- Sodium nitrite (E250)
- Ascorbic acid (E300)
- Sodium ascorbate (E301)
- Sodium erythorbate (E316)
- Citric acid (E330)
- Rosemary extracts (E392)
The size of the link depended on which one. Comparing people who ate the most of a given preservative against people who ate the least, the reported increases in new high blood pressure ran from roughly 14% for ascorbic acid and sodium erythorbate up to around 39% for sorbates, with citric acid somewhere near 25%.
Grouped together, the preservatives that are not antioxidants came out around 29% higher, and the antioxidant ones around 22% higher.
Only one of the eight held on to a link with heart and blood vessel disease itself once the maths was corrected for testing so many substances at once. That one was ascorbic acid. Which most people would read on a label as vitamin C.
If that list made your stomach drop slightly, that is a normal reaction and it is worth naming. Health news arrives as numbers, and numbers are very good at keeping a person awake at two in the morning with nothing they can actually do at two in the morning.
How do you even count something this small?
This came out of NutriNet-Santé, a French study that has been running online since 2009. People sign up and record what they ate — not once, but again and again. Some participants filed up to 96 separate day-long food records over the years.
Here is the part that made everything else possible, and it is the least exciting sentence in the whole study: they recorded the brand. Not “bread” but which bread. With the brand, you can pull up the real ingredient list of that real product and count what was actually in it. Without it, nobody could have named a single E number.
Fifty-eight preservative substances turned up across what these people ate. Only 17 of those were eaten by at least one person in ten — common enough to study properly. Eight of those 17 came out linked to high blood pressure.
Nearly half of the commonly eaten ones.
Participants were followed for a median of about 7.9 years for heart disease and about 7.6 years for blood pressure. Average age at the start was around 43, and roughly four in five were women.
The names that do not fit the scary story
Read that list again, slowly.
Citric acid is the sharpness in a lemon. Rosemary extract is rosemary. Ascorbic acid is vitamin C, and sodium erythorbate is its close cousin.
These are the clean-sounding ones. The ones a shopper’s eye lands on and relaxes about, because they read like food rather than chemistry. Meanwhile the tocopherols — the vitamin E preservatives, arguably the most wholesome-sounding name on any label — were not among the eight.
A food’s reputation and a food’s contents are two different things, and the gap between them is bigger than most of us assume. It is the same gap that turns up in Ezekiel bread, the health-shop loaf whose recipe began as a siege ration.
Now the honest part, because this is exactly where a headline can do real harm: nobody has shown that vitamin C raises blood pressure. Oranges are fine. Ascorbic acid gets added to industrial food as an antioxidant, to stop fats turning rancid and colours turning grey. So eating a lot of added ascorbic acid mostly means eating a lot of the kind of food that needs it. This study cannot separate the molecule from the packet it arrived in, and it does not claim to.
What the study does not say
This is an observational study. It watched what people ate and recorded what happened to them afterwards. It did not assign anyone a diet, and it cannot prove that one thing caused the other. The researchers say so themselves — the lead author, Mathilde Touvier, described “some limitations inherent to its observational design,” and the team’s conclusion was not that these ingredients cause disease. It was that regulators should take another look if the findings hold up. You can read the full announcement from the European Society of Cardiology, which publishes the journal the work appeared in.
That shape — a real finding, honestly reported, that still cannot prove cause — is the shape of most nutrition news. It is the same shape as the research linking sleeping with a light on to a thicker, stiffer heart. Genuinely interesting. Genuinely not proof.
One more thing worth holding on to: a 29% higher risk is not a 29% chance. It means the risk someone already had, nudged up by roughly that fraction. High blood pressure is common enough that a nudge matters — this is not nothing. But “higher risk” and “you will get it” are different sentences, and only one of them is being said here.
What you can reasonably do with this
Not a shopping list, and not advice. Just what follows logically from what was measured.
- Preservative intake tracks with how much industrial packaged food a person eats, far more than with any single ingredient. Federica Amati, a nutritionist commenting on the findings, made the practical point bluntly: it is “virtually impossible to reduce your preservative intake to zero,” and cutting down on ultra-processed food is a better place to start than hunting E numbers.
- Whatever you already cook from raw ingredients is already doing this work. Rice, beans, eggs, vegetables, bread you bake — none of these need preserving, because you eat them before they need it.
- Blood pressure is one of the very few things a person can actually check. In many places a clinic or pharmacy will measure it for nothing, and it takes a minute.
- The small print is readable now. That is the real change here: you have gone from “long words” to “I recognise four of those.”
The small amounts are the whole point
Here is what stayed with me after reading it.
Not one of these ingredients is doing anything dramatic. Every one of them is approved. Every one is used in amounts so tiny they are measured in fractions of a gram and judged harmless at that size — and individually, that judgement may well still be right.
The study did not find a villain hiding in the food. It found eight ordinary, permitted, entirely unremarkable things, each one small, each one repeated, across eight years of perfectly normal eating.
There is a line thousands of years old about a little leaven working its way through a whole lump of dough. People usually quote it as a warning about big corruption. It is really about something much quieter: a very small thing, given enough dough and enough time, changes everything it is in. The people who wrote it were not making a point about chemistry. They were making a point about attention — that what reshapes a person is almost never big enough to notice on the day it happens. Small, repeated, over years. That is how a diet works. If the old writers were right, it is also how a life works, and possibly how God prefers to work inside one.
Which cuts both ways, and that is the encouraging half of it.

Which food preservatives are linked to high blood pressure?
A French cohort study of 112,395 people, published in the European Heart Journal in 2026, reported links between eight preservative additives and new cases of high blood pressure: potassium sorbate (E202), potassium metabisulphite (E224), sodium nitrite (E250), ascorbic acid (E300), sodium ascorbate (E301), sodium erythorbate (E316), citric acid (E330) and rosemary extracts (E392). Of those eight, only ascorbic acid also held a link with cardiovascular disease itself after correction for multiple testing.
Does ascorbic acid raise blood pressure?
No study has shown that vitamin C itself raises blood pressure, and fruit and vegetables containing it are not implicated. Ascorbic acid (E300) is also used as an industrial antioxidant preservative, added to packaged foods to stop fats going rancid and colours fading. In the 2026 NutriNet-Santé analysis, high intake of added ascorbic acid was associated with roughly 14% more new high blood pressure and around 15% more cardiovascular disease compared with low intake. Because the additive travels with heavily processed food, the association may reflect the food it is in rather than the molecule itself. The study cannot tell those two apart.
Does this study prove that preservatives cause high blood pressure?
No. It is an observational cohort study: researchers recorded what 112,395 volunteers ate over a median of about seven and a half to eight years and tracked who later developed high blood pressure or cardiovascular disease. That design can show association but cannot establish cause, and the authors state this limitation plainly. Their conclusion was that regulators should re-examine these additives if the findings are confirmed, not that the additives have been proven harmful.
How much higher was the risk?
Comparing the highest consumers with the lowest, preservatives that are not antioxidants were associated with around 29% more new cases of high blood pressure, and antioxidant preservatives with around 22% more. Individual additives ranged from roughly 14% higher for ascorbic acid and sodium erythorbate to about 39% higher for sorbates. These are relative increases on a person’s existing risk, not the chance of developing the condition.
Are all food preservatives bad for you?
The evidence does not support that conclusion. The same study identified 58 preservative substances in participants’ diets, of which 17 were eaten by at least 10% of the group and so could be analysed. Eight of those 17 showed an association with high blood pressure; the rest, including the vitamin E based tocopherols, did not. Preservatives also do genuine work, preventing spoilage and food-borne illness. What the findings point to is the overall quantity of industrially preserved food in a diet, accumulated over years, rather than any single ingredient to avoid.
